Cookies with almond paste

Ingredients 1 baking tray of cookies
200 g peeled almonds
200g caster sugar
48 grams of egg white (about 1 and 1/2)
1/2 vanilla bean
1/2 teaspoon of chestnut honey
A few drops of essence of bitter almonds
Almonds, orange peel, citron or candied cherries
Icing sugar
Preparation
In a blender, blend together the almonds and sugar to make a paste; add the almond essence, honey and egg whites and continue to blend until it will form a firm but malleable dough.
Shape into balls or sticks, or put the dough in a pastry bag with large notched nozzle, forming small flakes or rings.
Place the cookies on a baking tray with parchment paper, decorate with almonds, bits of orange, citron or candied cherries. Let stand in refrigerator for at least 12 hours, then bake in the oven at 160 degrees for about 10 minutes.
